Hot Honey Sweet Potato Beef Bowl

Ingredients
- 1 taco seasoning pack
- 1 large sweet potato (cubed, skin on)
- 1 tub Organic Valley cottage cheese
- 1 avocado
- 1 lb ground beef (scrambled tofu if vegetarian)
- microgreens garnish
- hot honey drizzle
Instructions
- Drizzle diced sweet potatoes in sheet pan with avocado oil and season with 1/4 taco seasoning pack salt and pepper & bake at 350 degrees for 30 mins (add more time if needed).
- Cook ground beef, drain and use rest of taco seasoning packet.
- Assemble bowl w/cooked potatoes, ground beef, large scoop of Organic Valley cottage cheese, top with avocado slices and garnish with hot honey drizzle and microgreens.
