If you’re craving something simple that’s the perfect mix of sweet and savory, this Hot Honey Sweet Potato Beef Bowl is about to become your new go-to recipe. Created by Rachel Brown, the Rocket City Dietitian, this viral recipe is a hit in her own Huntsville kitchen—and it’s packed with protein, fiber, and healthy fats to keep you fueled.

 

Hot Honey Sweet Potato Beef Bowl

Ingredients

  • 1 taco seasoning pack
  • 1 large sweet potato (cubed, skin on)
  • 1 tub Organic Valley cottage cheese
  • 1 avocado
  • 1 lb ground beef (scrambled tofu if vegetarian)
  • microgreens garnish
  • hot honey drizzle

Instructions

  1. Drizzle diced sweet potatoes in sheet pan with avocado oil and season with 1/4 taco seasoning pack salt and pepper & bake at 350 degrees for 30 mins (add more time if needed).
  2. Cook ground beef, drain and use rest of taco seasoning packet.
  3. Assemble bowl w/cooked potatoes, ground beef, large scoop of Organic Valley cottage cheese, top with avocado slices and garnish with hot honey drizzle and microgreens.
