Created by Rachel Brown, the Rocket City Dietitian, this dish is an easy assembly and the perfect transition to fall item to add to your menu. You can easily add some grilled protein on top or eat without. Want more fall in your bite, toss fresh peaches or roasted and crushed pecans with cinnamon and cayenne before adding to the dish.
Peach Pasta with Crushed Pecans
- 2 cups of pasta
- 1/3 cup chopped pecans
- 1/3 cup feta crumbles
- 1 medium peach sliced
- 1/2 cup microgreens
- 1/4 cup olive oil
- garnish with salt & pepper to taste
Instructions
- Layer pasta base and drizzle with olive oil.
- Top with fresh peach slices, crumbled feta, sprinkle sunflower microgreens and pecan crumbles.
- Add finishing salt & pepper to taste.
