It doesn’t matter if the preferred prefix is “dough-” or “do-,” Alabama goes nuts for do(ugh)nuts.

Fresh-made doughnuts have been a multi-generation tradition at some of Alabama’s favorite specialty shops. Others are setting modern standards, using rich brioche dough or creating unusual toppings like bacon in maple sauce.

The dough for donuts is made with yeast or a cake leavening. It’s shaped into individual rings, which are allowed to rise. They’re fried, and then cooled before getting glazed and finishing touches like sprinkles or crushed candies.

We looked for local places that have folks buzzing, selecting these Sultans of Sweet. And on the dough- vs do- debate, we’ll come down squarely in the middle, and just follow each place’s lead.

Bigfoot’s Little Donuts (Huntsville, Madison)

Brian Steele started Bigfoot (he’s a fan of the John Lithgow Bigfoot movie, “Harry and the Hendersons”) in Huntsville in 2014, and expanded last year to Madison. It makes mini-donuts and serves them hot. Some three-dozen flavor options include a popular lemon glaze; candy and fruit flavored donuts include raspberry lemonade and peaches and cream.

Cothran’s Bakery (Gadsden, Boaz)

Doughnuts are the house specialty at Cothran’s Bakery, which has won reader surveys as the state’s best. Cothran’s has been in the same family for 60 years, starting with a chain before going independent in 1994. Its large assortment features glazed and chocolate-covered doughnuts, plus filled holes. City Donut (Orange Beach)

This beach-town sweet shop operates mornings seven days a week, but smart snackers know to beat the crowd if they want some of its more popular just-prepared donuts. When they run out, that’s it until tomorrow morning. Open since 2013, City Donut’s cake and yeast versions include iced, filled, and glazed, some topped with candy or cookies.

Donuts D-Lite (Wetumpka, Millbrook)

The original in Wetumpka, which opened in 2014, is not far off Interstate 65 (a second location and its Millbrook location is a bit further down Highway 14. They open early (4:30 a.m. Tuesday-Saturday, 5 a.m. Sunday in Millbrook; an hour later in Wetumpka). During college football season, Donuts D-Lite stocks up on crimson and white sprinkles for Roll Tide donuts, and blue and orange for War Eagle donuts.

Hero Doughnuts and Buns (Birmingham)

Food and Wine apparently believes everybody needs a Hero, naming it Alabama’s best earlier this year. Wil Drake started Hero at pop-ups and farmers markets, moving into a prime spot by Homewood’s Central Park in 2017 and across from Birmingham’s Railroad Park in 2020. The rich brioche dough, a two-day preparation, is the foundation for a lineup both classic and creative, including cereal milk and maple sea salt flavors.

Sugar Rush Donut Co. (Bayou La Batre, Mobile)

Known for service as sweet as its donuts, the original Sugar Rush opened in 2011 and its Mobile location two years later. The fruit-filled version, called bismarks, are fan favorites, especially lemon. Cake donuts include sour cream with chocolate icing. Sugar Rush also makes special-order donut cakes and a match made in heaven: a Conecuh Donut Sandwich.

The Heavenly Donut Company (Birmingham)

Owners Kimberly and Brock Biresdoerfer were novices when they opened The Heavenly Donut Company in January 2013. Recently it was ranked No. 8 among the Top 10 donuts in the nation by Travel Magazine. It stocks about two dozen types of fresh-made donuts, including glazed, flavored, and specialties like maple bacon. Hole choices are glazed and cinnamon sugar. Beignets and sausage donuts are available on Saturdays.
